Chocolate Banana Snack Cake

Ingredients

  • 1 cup oats, rolled, old fashioned
  • 1/2 cup butter, unsalted
  • 1 1/4 cup water boiling
  • 3/4 cup honey, light
  • 1 tsp vanilla extract
  • 2 banana, fresh, lrg, 8" to 8 7/8" long mashed
  • 2 eggs, whole
  • 1 3/4 cup flour, whole wheat
  • 1 1/2 tsp baking soda
  • 1 tsp spice, cinnamon, ground
  • 1/2 tsp salt, table
  • 1/4 tsp spice, nutmeg, ground
  • 1/2 cup coconut, dried, unsulfured, unsweetened, fine macaroon
  • 1/2 cup nuts, walnuts, black, dried, chpd
  • 1 cup baking chips, chocolate

Recipe Method

Heat oven to 350 F. Grease and flour 13x9 pan. In large bowl, combine oats, margarine and water; let stand 20 minutes. Stir in honey, vanilla, bananas and eggs; mix well. Lightly spoon flour into measuring cup; level off. In small bowl, combine flour, baking soda, cinnamon, salt and nutmeg. By hand, stir into oat-banana mixture until well blended. Fold in cocoanut, walnuts and chocolate chips. Pour into prepared pan. Bake at 350 F. for 35-40 minutes or until cake springs back when touched lightly in center. (Cake will not rise high.) Serves warm.
