  • 2 1/2 cups water
  • 3/4 cup sugar
  • 1 tbsp lime rind grated
  • 1/2 cup fresh lime juice (about 4 limes)
  • 1/2 cup light coconut milk

Recipe Method

1. Combine all ingredients in a large saucepan over medium heat.

2. Cook for 3 minutes or until sugar dissolves, stirring constantly. Remove from heat, and cool completely.

3. Pour the mixture into an 11x7-inch baking dish. Cover and freeze for 8 hours or until firm.

4. Remove mixture from freezer; let stand 10 minutes. Scrape entire mixture with a fork until fluffy.
