  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 cup water
  • 1/3 cup dark molasses
  • 1/4 cup butter melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 recipe Orange Creme Filling

Garnish:

  • orange zest

Orange Creme Filling

  • 1 (3-ounce) package cream cheese softened
  • 1/4 cup butter softened
  • 1 tsp orange zest
  • 1 cup confectioners' sugar

Recipe Method

1. Preheat oven to 350 degrees. Grease and flour a 9-inch square pan.

2. In a medium bowl, combine flour, sugar, baking soda, ginger, and cinnamon.

3. In a separate bowl, beat water, molasses, butter, egg, and vanilla extract at medium speed with an electric mixer until smooth. Combine flour mixture and water mixture.

4. Continue beating at medium speed, scraping down sides of bowl several times. Pour batter into prepared pan.

5. Bake for 25 to 30 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan, and let cool completely on a wire rack.

6. With a serrated knife, trim 3/4 inch from each side of gingerbread; cut into approximately 4x1 1/2-inch fingers.

7. Cut each finger in half horizontally, and evenly spread Orange Creme Filling on bottom half of gingerbread fingers; replace tops of gingerbread fingers.

8 .Garnish by piping additional orange creme on gingerbread and top with orange zest, if desired.

Orange Creme Filling: Makes 1 cup

1. In a medium bowl, combine cream cheese, butter, and orange zest; beat at medium speed with an electric mixer until smooth.

2. Add confectioners’ sugar and continue to beat until smooth.
