A quick and easy meal from the Philippines with a myriad of different flavors going on.
1. Cut chicken into 8 pieces, making sure to remove giblet, the neck and the organs. Or if you prefer, chicken thighs and legs or even chicken breast can be substituted.
2. Let the chicken sit in the marinade of vinegar and garlic cloves for at least 2 hours.
3. Pat chicken dry with paper towels and brown the chicken in a pot with some oil, making sure to have nice color on both sides of the chicken.
4. Remove chicken and start to saute the onions, making sure not to much 2 much color on the onions by lowering the heat.
5. Add the tomatoes, liver spread, pimentos and olives to the sauce.
6. Then add the chicken and lower the heat to a simmer, or if you prefer you can place the dish, covered, in the oven at 350 F at 20-25 minutes.
7. Season with salt and pepper
