A very simple dish that adds depth to many sweet and savory dishes and is a nice snack for the kids as well. Meant to be more of a garnish and snack.
1. Peel the ginger root and slice into either thin slices or into small squares. The best way to peel ginger is with either a vegetable peeler or a spoon.
2. Place ginger in some boiling water and reduce to a simmer. Allow ginger to soften and cook for roughly 40-45 minutes.
3. Strain ginger with a single mesh strainer or on some paper towels.
4. Coat ginger evenly with sugar and allow to air dry on a baking sheet for a few hours.
