  • 6 quarts water
  • 1 tbsp salt
  • 3 pounds haricot vert washed and trimmed
  • 3 tablespoons fresh lemon juice
  • 2 1/2 teaspoons garlic salt
  • 1/4 tsp ground black pepper
  • 1/4 cup olive oil

Recipe Method

1. Preheat oven to 450 degrees. Line a large roasting pan with aluminum foil; set aside.

2. In a large Dutch oven or stockpot, combine water and salt. Bring to a boil over medium-high heat. Add haricot vert, and cook for 8 to 10 minutes, until just tender. Drain, rinse with cold water, and drain again.

3. In a large bowl, combine lemon juice, garlic salt, and pepper; whisk in olive oil until well blended. Add haricot vert and toss to coat completely; place in prepared pan. Bake for 25 to 30 minutes, stirring every 10 minutes.
