1. Preheat oven to 350 degrees. Lightly grease baking sheets.
2. In a large bowl, beatshortening and sugars at medium speed with an electric mixer until fluffy. Add egg, water, vanilla extract, and cinnamon, beating until combined. Add flour, beating until combined. Stir in oats.
3. Drop batter by teaspoonfuls onto prepared baking sheets. Bake for about 10 minutes, or until edges of cookies are just beginning to brown, but center still appears doughy. Remove from pans, and cool completely on wire racks.
