1/2 cup bulgur
-
2 cups fresh parsley leaves minced

1 cup fresh mint leaves minced

1/2 pint cherry or grape tomatoes halved

1/2 cup green onion chopped

1/2 cup extra-virgin olive oil

4 tablespoons lemon juice freshly squeezed

Salt and freshly ground pepper to taste

1 chickpeas drained and rinsed
Recipe Method
1. Spread chickpeas in a single layer in a toaster oven (or real oven).
Brush with
olive oil,
salt and
bake at 325 for 15-20 minutes or until golden
brown.
2. Meanwhile soak the bulgur in a large container in hot water until tender, about 15 to 30 minutes. Drain well, squeezing out as much of the water as possible.
3. Whisk together the olive oil and lemon juice.
4. Combine the bulgur with the parsley, mint, tomatoes, and green onion. Toss with the dressing. Stir in the toasted chickpeas.
5. Season with salt and pepper and taste; adjust seasoning if necessary.
