A pork dish that is slowly cooked in a sweet and salty sauce. A perfect accompaniment to either bread or rice.

Ingredients

  • 1 1/2 kilogram pork, belly, raw
  • 2 stalks onions, spring (green), raw
  • 2 tbsp ginger root, raw Minced
  • 1 cup sauce, soy, dark
  • 1 tbsp spice blend, chinese five spice, pwd, intl
  • 6 cloves Star anise
  • 1 cup sugar, brown
  • 2 cup water, tap

Recipe Method

1. Blanch the pork in some boiling water for a 20 seconds, to tighten the skin and remove some impurities from the pork.
2. In a large pot combine green onions, ginger, soy sauce, five spice, star anise, brown sugar and water.
3. Place pork into the soy sauce broth and lower heat to a simmer and cook covered for 2 1/2 - 3 hours or until meat is tender.
4. Remove pork from sauce and slice into half an inch squares.
5. Bring remaining sauce into a bowl until you get desired consistency then pour over the pork belly.

Note: If you want you can use a pressure cooker to soften the pork.
