It is a nice chocolate sponge to use for chocolate mosse cake, or any chocolate cake.
1. Preheat the oven to 350F. Grease an 1 8" round cake tin and line the base with baking paper. Combine water, oil, egg yolk and vanilla into a bowl. Using a whisk and mix it.
2. Sift in flour and cocoa powder into the yolk mixture, mix it well.
3. Put egg white into a clean mixing bowl and beat it with electric beaters until soft peaks. Add sugar and continuously whip until stiff.
4. Fold egg white mixture into the yolk mixture, mix until well combined. But do not over mix it. Otherwise the air bubbles will be driven out of the batter and the cake will not rise properly.
5. Pour mixture into the cake tin. Bake at 350C for 25 -30 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Immediately invert the cake after taking it out from the oven and let it cool.
