Adobo Pork Chops

Ingredients

  • 6 pork, chop, center rib loin, lean, raw
  • 2 tbsp sugar, brown, packed
  • 2 tbsp herb, cilantro, leaves, fresh
  • 2 tbsp oil, olive, extra virgin
  • 2 tbsp orange juice, chilled
  • 1 tbsp red wine vinegar or cider vinegar
  • 2 tsp chili powder
  • 1 tsp spice, cumin, seeds, ground
  • 1 tbsp herb, oregano, fresh, intl
  • 1/2 tsp salt, table
  • 1/4 tsp pepper, red or cayenne
  • 1/4 tsp cinnamon, ground
  • 3 garlic, cloves, fresh

Recipe Method

1. Trim fat from chops. Place chops in a resealable plastic bag, set in a shallow dish. For marinade, in a small bowl, combine brown sugar, cilantro, oil, orange juice, vinegar, chili powder, cumin, oregano, salt, cayenne pepper (if desired), cinnamon and garlic. Pour marinade over chops. Seal bag; turn to coat chops. Marinate in the refrigerator for at least 2 hours or up to 24 hours, turning bag occasionally.

2. Drain chops, discard marinade. Place chops on the rack of an unheated grill directly over medium coals. Grill for 12 to 15 minutes or until chops are done (160 F.), turning once halfway through grilling time.
