Herbed Mustard Chicken

Ingredients

  • 1 liter herb, parsley, fresh, chpd
  • 1 tbsp water, tap
  • 1 tbsp dressing, mayonnaise type, fat free
  • 1 tbsp mustard, dijon
  • 1 tbsp herb, oregano, fresh, intl
  • 1/8 tsp pepper, red or cayenne
  • 3 pound chicken, broiler/fryer, dark meat, w/o skin, raw
  • 1/4 tsp salt, table
  • 1/4 tsp spice, pepper, black, ground

Recipe Method

1. For sauce, in a small bowl, combine parsley, water, mayonnaise, mustard, oregano and cayenne pepper. Cover and refrigerate until ready to use. Sprinkle chicken with salt and pepper.

2. Arrange medium hot coals around a drip pan. Test for medium heat above pan. Place chicken pieces, bone sides down, on a grill rack over the drip pan. Cover and grill for 50 to 60 minutes or until chicken is no longer pink (170 F. for breasts; 180 F. for thighs and drumsticks), brushing occasionally with sauce during the last 10 minutes of grilling time.
