Cilantro Chicken with Peanuts

Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 1 1/4 pound chicken breast meat cut into 1-inch pieces
  • 4 tsp soy sauce, shoyu, low sodium
  • 2 tsp vinegar, rice, natural
  • 1 tsp oil, sesame, toasted, unrefined
  • 1/8 tsp pepper, red or cayenne
  • 1 1/2 cup herb, cilantro, leaves, fresh
  • 4 cup cabbage, napa/nappa, fresh
  • 1/4 cup peanuts, dry-roasted coarsely chopped

Recipe Method

1. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add chicken. Cook and stir for 3 to 4 minutes or until chicken is no longer pink.

2. Add soy sauce , rice vinegar, sesame oil and crushed red pepper. Cook and stir for 1 minute more. Remove from heat. Stir in cilantro.

3. Spoon chicken mixture over cabbage and sprinkle with peanuts. Serve immediately.
