Pepper & Peach Chicken Fajita

Ingredients

  • 1 1/2 pound skinless, boneless chicken breast halves (four)
  • 1 1/2 tsp seasoning, fajita
  • 1 cooking spray, 1/3 sec spray
  • 2 red bell peppers, cut into thin bite-size strips
  • 1 cup fresh peach or nectarine halved, pitted and cut into thin slices, or frozen unsweetened sliced peaches, thawed

Recipe Method

1. Sprinkle both sides of chicken breast halves with the fajita seasoning. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat skillet over medium heat. Cook chicken in hot skillet for 12 to 15 minutes or until chicken is no longer pink (170 F.), turning once halfway through cooking time. Transfer chicken to serving platter; keep warm.

2. Add sweet pepper strips to hot skillet. Cook and stir about 3 minutes or until crisp-tender. Gently stir in peach slices. Cook for 1 to 2 minutes more or until heated through. Spoon pepper strips and peaches over chicken.
