Baked Stuffed Herring

Ingredients

  • 4 tbsp bread crumbs, white, soft, tstd
  • 1 tsp herb, parsley, fresh, chpd
  • 1 serving eggs beaten
  • 1 tbsp juice, lemon, fresh
  • 1 pint nutmeg, ground
  • 8 Herrings, cleaned
  • 300 ml Hard cider
  • 1 tbsp bay leaf, crumbled
  • 1 serving Fresh ground pepper

Recipe Method

First make the stuffing by mixing the breadcrumbs, parsley, beaten egg, lemon juice and peel, and salt and pepper. Stuff the fish with the mixture. Lay in an ovenproof dish, close together; add the cider, crumbled bay leaf and salt and pepper. Cover with foil and bake at 350F for about 35 minutes.
