  • 1/3 cup oil, olive, pure
  • 2 bell pepper
  • 3 tbsp fresh ginger
  • 3 garlic cloves
  • 14 ounce-weight tofu, extra firm
  • 1 cup green onions
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1/2 tsp crushed red chili flakes
  • 6 ounce-weight spinach
  • 1/3 cup fresh basil
  • 1/3 cup lightly salted roasted peanuts

Recipe Method

1. Heat oil in wok over high heat. Add bell peppers, ginger, and garlic; saute until peppers just begin to soften, about 2 minutes.

2. Add tofu and green onions; toss about 2 minutes.

3. Add next three ingredients. Toss to blend about 1 minute.

4. Add spinach in 3 additions, tossing until beginning to wilt, about 1 minute for each addition.

5. Mix in basil. Season with salt and pepper.

6. Sprinkle peanuts over.
