Ingredients

  • 1 pound turkey, breast tenderloin (about 1 pound total)
  • 1 1/2 tsp spice, cumin, seeds, ground
  • 1 1/2 tsp spice, coriander, seeds
  • 1 tsp lime peel finely grated
  • 3/4 tsp salt, table
  • 3/4 tsp ginger, ground
  • 1/4 tsp red pepper crushed
  • 1/4 cup sour cream, rducd fat
  • 1 tbsp lime juice, raw

Recipe Method

1. Split each turkey breast tenderloin in half horizontally to form a total of 4 turkey steaks; set aside. In a small bowl combine cumin, coriander, lime peel, salt, ginger and crushed red pepper. Set aside 1/4 teaspoon of the cumin mixture. Sprinkle remaining mixture over the turkey steaks; run in with your fingers.

2. Place turkey steaks on the rack of an uncovered grill directly over medium coals. Grill for 12 to 15 minutes or until no longer pink (170 F.), turning once halfway through grilling time.

3. Meanwhile, in a small bowl, combine sour cream, lime juice and the reserved cumin mixture. Serve sauce with grilled turkey steaks.

To Broil: Coat the unheated rack of a broiler pan with nonstick cooking spray. Place turkey steaks on rack; broil 4 to 5 inches from the heat for 8 to 10 minutes or until no longer pink (170 F.), turning once halfway through broiling time.
