Mustard-Rosemary Grilled Lamb

Ingredients

  • 2 pound lamb, rib or loin chops (eight) cut 1 inch thick
  • 1/4 cup spice, mustard seed, ground
  • 1/4 cup onion, green thinly sliced
  • 2 tbsp wine, white, med
  • 1 tbsp vinegar, balsamic
  • 3 garlic cloves minced
  • 1 tsp rosemary, fresh
  • 1 tsp honey, amber
  • 1/2 tsp salt, table
  • 1/2 tsp spice, pepper, black, ground

Recipe Method

1. Trim the fat from chops. In a small bowl stir together mustard, green onions, wine, vinegar, garlic, rosemary, honey, salt and pepper. Spread mixture evenly over both sides of each chop. Place chops on a large plate and cover loosely with plastic wrap. Chill for at least 2 hours or up to 3.

2. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness is reached, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare doneness (145 F.) or 15 to 17 minutes for medium (160 F.).
