Broiled Fish

with Citrus-Grape Sauce

Ingredients

  • 1 1/4 pound halibut, grouper or shark steaks, fresh or frozen 3/4 inch thick
  • 1 cooking spray, 1/3 sec spray
  • 1/2 tsp seasoning, lemon pepper
  • 1/4 cup onion, green, chpd, fresh
  • 1/2 tsp orange peel, fresh, grated
  • 1 1/4 cup orange juice, chilled
  • 1 tbsp cornstarch
  • 1/4 tsp salt, table
  • 3 oranges peeled, sectioned and seeded
  • 1 cup grapes, seedless green halved

Recipe Method

1. Thaw fish, if using frozen. Coat the unheated rack of a broiler pan with nonstick cooking spray. Sprinkle both sides of fish with lemon-pepper seasoning. Place fish on prepared rack of broiler pan. Broil 4 inches from heat for 4 minutes; turn fish. Broil 3 to 5 minutes more or until fish flakes easily when tested with a fork.

2. Meanwhile, for sauce, coat an unheated medium saucepan with nonstick cooking spray. Add green onions; cook and stir over medium heat until tender.

3. In a medium bowl stir together orange peel, orange juice, cornstarch and salt. Add to green onions in saucepan. Cook and stir until mixture is thickened and bubbly. Cook and stir for 2 minutes more. Add orange sections and grapes. Heat through. Spoon sauce over fish.
