Ginger-Marinated Lamb Chops

Ingredients

  • 2 pound lamb loin chops (8 chops) cut 1 inch thick
  • 1 onion, green chopped
  • 3 tbsp soy sauce, shoyu, low sodium
  • 2 tbsp vinegar, rice, natural
  • 2 tbsp oil, canola
  • 2 tbsp ginger grated
  • 1/4 tsp salt, table
  • 1/8 tsp spice, chili pepper, red, crushed flakes
  • 1 garlic, cloves, fresh

Recipe Method

1. Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl combine green onion, soy sauce, rice vinegar, oil, ginger, salt crushed red pepper and garlic. Pour over chops. Seal bag; turn to coat chops. Marinate in the fridge for at least 4 or up to 24 hours, turning the bag occasionally.

2. Drain chops, discard marinade. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness is reached, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare (145 F.) or 15 to 17 minutes for medium (160 F.).
