Ingredients

  • 1 cup butter, unsalted
  • 1 cup sugar, brown
  • 370 ml corn syrup
  • 370 ml molasses
  • 4 tsp spice, ginger, ground
  • 2 tsp spice, cinnamon, ground
  • 4 eggs, whole
  • 490 ml milk, whole, 3.5%, homogenized, w/add vit d
  • 4 tsp baking soda
  • 2 cup flour, all purpose, bleached, enrich

Recipe Method

1. Preheat the oven to 325F. Grease a loaf tin and line the base and sides with baking paper. Place butter, sugar, syrup, molasses, and spices into a pot and heat until butter is melted. Add sugar and dissolve into the mixture. Remove from heat.
2. Mix eggs with milk and baking soda. Add the mixture slowly into the butter sugar mixture. Sift flour into the mixture with whip attachment and slowly add liquids. Mixing thick first to avoid lumps and then thin with remaining liquid.
3. Pour mixture into a loaf tin and bake 325F for 40 -50 minutes, or until it firm.

Warm ginger cake and serve with vanilla ice cream!
