Veal Chops

Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 2 garlic cloves minced
  • 1 3/4 cup tomatoes, diced, canned undrained
  • 7 ounce-weight peppers, bell, red, rstd, w/brine
  • 1/4 tsp spice, chili pepper, red, crushed flakes
  • 2 pound veal, loin chop, lean, raw
  • 1/4 tsp salt, table
  • 1 tbsp vinegar, balsamic

Recipe Method

1. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat skillet over medium heat. Add garlic and cook for 1 to 2 minutes or until golden brown. Add tomatoes, roasted red peppers and crushed red pepper. Bring to a boil; reduce heat. Simmer, uncovered, about 12 minutes or until slightly thickened.

2. Meanwhile sprinkle veal chops with salt. Heat a large nonstick skillet over medium-high heat until hot. Reduce heat to medium. Place veal chops in skillet; cook for 12 to 14 minutes or until medium doneness is reached (160 F.), turning once halfway through cooking time. Carefully cut meat from bones; thinly slice meat.

3. Stir balsamic vinegar into tomato mixture; serve with chops.
