Bake lady fingers as soon as possible after being piped out.
1. Perheat the oven to 190C. Grease 2 13 x 11 inch baking trays and line with baking paper. Using electric beaters, beat the first part of sugar and egg yolk in a mxing bowl until ribbon stage, and add flavours. set aside.
2. Put egg white in a clean mixing bowl, beat egg whites until soft peaks form. Add sugar and continued beat it to stiff.
3. Sift flour and cornstarch together, set aside.
4. Fold 1/3 of egg whites into yolks mixture. Then gently fold in the sifted flour mixture, after this add the remaining 2/3 of whites.
5. Spoon into a piping bag with large round trbe. Pipe lady fingers 2 inch long onto paper lined pans. Sift freely with
