Hearty Beef Stew

Ingredients

  • 1 pound beef, bottom round outside steak, raw, 0" trim
  • 2 cup onion, white, fresh, chpd
  • 1 1/2 cup bouillon/broth, beef, low sod, cnd
  • 1 cup water, tap
  • 1/2 tsp salt, table
  • 1/2 tsp thyme, dried crushed
  • 1/4 tsp spice, pepper, black, ground
  • 2 garlic cloves minced
  • 1 pound potatoes, tiny new quartered (about 3 cups)
  • 1 pound carrots sliced (about three cups)
  • 8 ounce-weight mushrooms, fresh, pces/slices
  • 1 1/2 cup tomatoes, can diced undrained
  • 3 tbsp tomato paste, unsalted, 6oz can
  • 1 cup peas, green, fzn, 10oz pkg

Recipe Method

1. Trim fat from steak. Cut steak inot 1-inch pieces. In a 4-quart Dutch oven combine meat, onions, beef broth, the water, salt, thyme, pepper and garlic. Bring to a boil; reduce heat. Cover and simmer for 1 hour.

2. Stir in potatoes, carrots and mushrooms. Return to boiling; reduce heat. Cover and simmer about 30 minutes more or until meat and vegetables are tender.

3. Stir in undrained tomatoes and tomato paste. Stir in peas; heat through.
