Asian Pork Soup

Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 12 ounce-weight pork, boneless cut into bite-sizes strips
  • 2 cup shiitake mushrooms, fresh sliced
  • 2 garlic cloves minced
  • 4 1/2 cup chicken broth (three 14-oz. cans)
  • 2 tbsp dry sherry
  • 2 tbsp soy sauce, shoyu, low sodium
  • 2 tsp ginger, grated or 1/2 tsp. ground ginger
  • 1/4 tsp spice, chili pepper, red, crushed flakes
  • 2 cup cabbage, napa/nappa, fresh
  • 1 green onion thinly sliced

Recipe Method

1. Coat an unheated large nonstick saucepan with nonstick cooking spray. Preheat pot over medium heat. Add pork to hot saucepan; cook for 2 to 3 minutes or until slightly pink in centre. Remove from saucepan; set aside. Add mushrooms and garlic to saucepan; cook and stir until tender.

2. Stir in chicken broth, sherry, soy sauce, ginger and crushed red pepper. Bring to a boil. Stir in pork, cabbage and green onion; heat through.
