Spinach-Feta Bake

A meatless main dish

Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 3/4 cup onion, white, fresh, chpd
  • 3 garlic, cloves, fresh
  • 2 spinach, 10 oz. packages frozen thawed and well drained
  • 1 cup cottage cheese, low fat drained
  • 1 cup cheese, feta, traditional, crumbles
  • 2 eggs, large, raw
  • 1 tbsp herb, oregano, fresh, intl
  • 1/4 tsp spice, pepper, black, ground
  • 1/4 cup cheese, parmesan, fresh, shredded
  • 2 tbsp bread crumbs, dry, grated, plain

Recipe Method

1. Lightly coat a 9-inch pie plate with nonstick cooking spray; set aside. Coat an unheated medium non-stick saucepan with nonstick cooking spray. Preheat over medium heat. Add onion and garlic to hot pan; cook until onion is tender, stirring occasionally. Remove from heat.

2. Stir in spinach, cottage cheese, feta, eggs, oregano and pepper. Spoon the mixture into pie plate.

3. In a small bowl combine Parmesan cheese and bread crumbs; sprinkle over spinach mixture. Bake in a 350 F. oven for 30 to 35 minutes or until a knife inserted near centre comes out clean.
