Two-Bean Burritos

Ingredients

  • 8 tortillas, spinach flour (if available)
  • 15 fluid ounce black beans (one can) rinsed and drained
  • 8 fluid ounce corn, whole kernel rinsed and drained
  • 1 mango chopped
  • 1/3 cup bell pepper, red sweet chopped
  • 1/4 cup herb, cilantro, leaves, fresh
  • 2 tbsp lime juice, raw
  • 1 jalapeno pepper seeded and finely chopped *
  • 1 cooking spray, 1/3 sec spray
  • 1/2 cup onion, white, fresh, chpd
  • 16 fluid ounce refried beans, cnd
  • 1/2 cup salsa

Recipe Method

1. Wrap the tortillas in foil. Heat in a 350 F. oven about 10 minutes or until warm.

2. Meanwhile, in a medium bowl combine half the black beans, the corn, mango, sweet pepper, cilantro, lime juice and chile pepper. Set aside until ready to serve.

3. Coat an unheated, large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add onion to hot pan; cook about 5 minutes or until tender. Stir in the remaining black beans, the refried beans and salsa; heat through.

4. Divide the refried bean mixture among the warm tortillas; roll up. Top individual servings with corn mixture.

  • Note: Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
