Nutty Orzo & Vegetables

Ingredients

  • 2 cup vegetables, frozen mixed
  • 1/2 cup pasta, orzo (rosamarina)
  • 15 fluid ounce beans, garbanzo, cnd
  • 14 1/2 fluid ounce tomatoes, diced, unsalted, cnd
  • 11/3 cup sauce, pasta, marinara, homestyle
  • 1 tsp herb, thyme, leaves, ground
  • 1/4 cup cashews or almonds chopped or slivered
  • 1/4 cup cheese, mozzarella & provolone, shredded

Recipe Method

1. In a large saucepan cook the frozen veggies and pasta according to package directions, except omit any oil or salt. Drain. Return to hot saucepan.

2. Stir in garbanzo beans, undrained tomatoes, spaghetti sauce and thyme. Bring to a boil, reduce heat. Cover and simmer for 5 more minutes.

3. Stir in nuts. Sprinkle individual servings with cheese.
