Barbecued Loin-Back Ribs

Ingredients

Sauce
  • 1 cup onion, chopped
  • 1/4 cup salad oil
  • 1 cup tomato sauce, cnd
  • 1/4 cup sugar, brown
  • 1/4 cup water, tap
  • 1/4 cup lemon juice, raw
  • 1/4 cup sauce, steak
Rib
  • 1 tsp salt, table
  • 1/4 tsp pepper, white
  • 4 pound loin back ribs or meaty spareribs , sawed in 2 strips about 4 inches wide

Recipe Method

1. For sauce, cook onion in hot oil until tender but not brown, add the next 7 ingredients. Simmer uncovered for 15 min or until of nice sauce consistency.

2. Salt and pepper the ribs, lace in accordion style on spit, securing with holding forks. Put a drip pan under ribs. Attach spit to motor and lower bbq hood. let ribs rotate over slow coals 1 hour or till meat is well done.

3. Last 30 min., brush ribs frequently with sauce and add dampened wood (hickory) chunks to coals for smoke flavor.
