1. Preheat the oven to 325F. Line baking trays with baking paper. Bring sugar, flour, salt, baking powder into a mixing bowl. Cut butter into small pieces using your fingertips, until the mixture is fine and crumbly. Make a well in the centre of the mixture.
2. Mix in buttermilk into the flour mixture and stir it until just combined. Gather the dough together and turn it out onto a lightly floured surface. Press out the dough until it is 1 inch thick. Cut out rounds with a floured cutter.
3. Place the rounds on the baking tray, leaving a little room for spreading. Brush with the extra milk. Bake on the middle shelf of the oven for 15-20 minutes, or until golden brown on top.
4. If you are serving the scones warm, straight from the oven, wrap them in a clean tea towel while still hot. Serve warm or cold, with butter or with cream and jam.
