Grilled Cajun Chicken Salad

Ingredients

  • 1/4 cup vinegar, cider
  • 4 tbsp oil, veg, pure
  • 1 tbsp water, tap
  • 2 tsp sugar
  • 2 tsp thyme, fresh (or 1/2 tsp. dried, crushed)
  • 1 1/4 tsp onion powder
  • 1/2 tsp pepper, red or cayenne
  • 1/4 tsp garlic powder
  • 1/4 tsp dry mustard
  • 1/2 tsp spice, pepper, black, ground
  • 1/4 tsp salt, table
  • 1 1/2 pound chicken breast, 4 boneless halves
  • 6 cup salad, field greens
  • 1 red sweet pepper cut into bite-size strips
  • 1 green onion sliced

Recipe Method

1. For dressing, in a screw-top jar, combine cider vinegar, 3 tablespoons of the salad oil, water, sugar, thyme, 1/4 tsp. of the onion powder, 1/4 tsp. of the cayenne pepper, garlic powder and the mustard powder. Cover and shake well. Chill until serving time.

2. In a small bowl combine remaining 1 tablespoon salad oil, remaining 1 tsp. onion powder, remaining 1/4 tsp. cayenne pepper, black pepper and salt. Brush chicken with this entire mixture.

3. Place chicken on the rack of an uncovered grill directly over medium coals. Grill for 12 to 15 minutes or until chicken is tender and no longer pink (170 F.), turning once halfway through grilling time.

4. To serve, in a large bowl, combine salad greens, red pepper and green onion. Cut chicken into bite-size pieces. Add chicken and dressing to salad. Toss to coat.
