Beef Salad

1 pound beef, top sirloin boneless 1

1/4 tsp salt, table

4 cup lettuce, romaine, fresh, chpd

1/2 red onion thinly sliced, separated into rings

1 cup cherry tomatoes halved

1/2 cup cheese, feta, traditional, crumbles
Lemon Vinaigrette Dressing

1/4 cup oil, olive, extra virgin
-
1/2 tsp lemon peel, fresh
-
3 tbsp lemon juice, raw
-
1 tsp herb, oregano, whole, pure, dried

2 garlic, cloves, fresh
-
1/8 tsp salt, table
-
1/8 tsp spice, pepper, black, ground
Recipe Method
1. Trim fat from steak. Sprinkle with
salt and
pepper. Place steak on the unheated rack of a broiler
pan.
Broil 3 to 4 inches from heat until done, turning once halfway through broiling time. Allow 15 to 17 minutes for medium-rare or 20 to 22 minutes for medium doneness. Thinly slice.
2. For dressing, in a screw-top jar combine ingredients, cover and shake well.
3. Divide romaine among 4 dinner plates. Top with sliced meat, red onion, tomatoes and feta cheese. Drizzle with Lemon Vinaigrette.
