Mediterranean Beef Salad with Lemon Vinaigrette

Ingredients

Beef Salad
  • 1 pound beef, top sirloin boneless, 1
  • 1/4 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground
  • 4 cup lettuce, romaine, fresh, chpd
  • 1/2 red onion, thinly sliced, separated into rings
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cheese, feta, traditional, crumbles
Lemon Vinaigrette Dressing
  • 1/4 cup oil, olive, extra virgin
  • 1/2 tsp lemon peel, fresh
  • 3 tbsp lemon juice, raw
  • 1 tsp herb, oregano, whole, pure, dried
  • 2 garlic, cloves, fresh
  • 1/8 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground

Recipe Method

1. Trim fat from steak. Sprinkle with salt and pepper. Place steak on the unheated rack of a broiler pan. Broil 3 to 4 inches from heat until done, turning once halfway through broiling time. Allow 15 to 17 minutes for medium-rare or 20 to 22 minutes for medium doneness. Thinly slice.

2. For dressing, in a screw-top jar combine ingredients, cover and shake well.

3. Divide romaine among 4 dinner plates. Top with sliced meat, red onion, tomatoes and feta cheese. Drizzle with Lemon Vinaigrette.
