Potpourri Chicken Salad

Ingredients

  • 1 pound chicken, breast, diced, grilled
  • 1 1/2 cup celery, fresh, diced
  • 1/2 cup onion, white, fresh, chpd
  • 1/2 cup waterchestnuts, matai, cnd, w/liquid, slices
  • 1/4 cup seeds, sunflower, hulled
  • 1 cup dressing, mayonnaise type, fat free
  • 2 tbsp mustard, dijon
  • 8 cup salad, field greens

Recipe Method

1. In a large bowl combine chicken breast, celery, onion, water chestnuts, olives and sunflower seeds. Add mayonnaise and Dijon mustard; mix well. Cover and chill for at least 2 hours or up to 24.

2. Serve chicken mixture over salad greens.
