Stir-Fried Beef & Apple Salad

Ingredients

  • 1/4 cup vinegar, rice, natural
  • 1 tbsp oil, veg, pure
  • 2 tsp chives, fresh snipped
  • 2 tsp soy sauce, shoyu, low sodium
  • 1 tsp sugar brown (or honey)
  • 1/8 tsp cinnamon, ground
  • 1/8 tsp salt, table
  • 8 ounce-weight beef, top round steak
  • 1 cooking spray, 1/3 sec spray
  • 1 tsp oil, sesame, toasted, unrefined
  • 1 apples, fresh, med, 2 3/4"
  • 1/2 tsp spice, pepper, black, restaurant grind
  • 6 cup salad, field greens

Recipe Method

1. For dressing, in a screw-top jar combine rice vinegar, salad oil, chives, soy sauce, brown sugar, cinnamon and salt. Cover and shake well, set aside.

2. Trim fat from steak. Cut into bite-size strips. Coat an unheated large nonstick skillet with nonstick cooking spray. Add sesame oil to skillet. Preheat over medium-high heat. Add meat, cook and stir in hot oil for 2 to 3 minutes or until meat is slightly pink in centre. Add apple slices; cook and stir about 1 minute more or just until heated through. Sprinkle with pepper.

3. To serve, divide salad greens among 4 dinner plates. Arrange meat mixture on dop of greens. Shake dressing; drizzle over salads.
