Ingredients

  • 4 pound Boneless pork roast
  • 2 tsp salt, table
  • 2 tsp pepper, white
  • 1.12 ounce-weight preserves, cherry
  • 1/4 cup vinegar, red wine
  • 2 tbsp syrup, corn, light
  • 1/4 tsp spice, cinnamon, ground
  • 1/4 tsp spice, nutmeg, ground
  • 1/4 tsp cloves, ground
  • 1/4 cup slivered almonds Toasted

Recipe Method

1. Rub roast with a little salt and pepper. Place on rack in shallow roasting pan. Roast, uncovered at 325 degrees for 2-4 hours.

2. Meanwhile, combine preserves, vinegar, syrup, spices and 1/4 teaspoon salt. Heat and stir until boiling, reduce heat and simmer for 2 minutes.

3. Add almonds. Keep sauce warm. Spoon some sauce over roast to glaze. Return to oven until meat thermometer reads 170 degrees, basting with sauce several times.

4. Remove from oven and let stand ten minutes. Slice roast and pass remaining sauce over slices. Heat and serve.
