Spinach-Pasta Salad with Shrimp

Ingredients

  • 1 cup pasta, medium shell or elbow macaroni
  • 1 pound shrimp, fresh or frozen cooked
  • 1 cup peppers, bell, red, sweet, fresh, chpd
  • 1/3 cup salad dressing, caesar, creamy
  • 2 tbsp herb, dill weed, fresh, sprigs
  • 1/4 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground
  • 6 ounce-weight spinach, baby, fresh
  • 4 ounce-weight goat cheese, or feta crumbled

Recipe Method

1. In an extra large bowl combine cooked pasta, shrimp and sweet pepper. Drizzle with salad dressing; sprinkle with dill, salt and pepper. Toss to coat. Divide spinach among 6 dinner plates. Top with shrimp mixture and cheese.
