Roast Beef Sandwiches with Horseradish Slaw

Ingredients

  • 1/3 cup sour cream, light
  • 2 tbsp chives, raw
  • 2 tbsp mustard, spicy brown
  • 1 tsp horseradish, prep
  • 1/2 tsp sugar
  • 1 cup broccoli (broccoli slaw mix) shredded
  • 8 ounce-weight roast beef, cooked thinly sliced
  • 8 piece bread, sourdough, tstd, med slice

Recipe Method

1. In a medium bowl combine sour cream, chives, brown mustard, horseradish, sugar and salt. Add shredded broccoli; toss to coat.

2. To assemble, divide roast beef among 4 of the bread slices. Top with broccoli mixture and remaining bread slices. If desired, secure sandwiches with toothpicks.
