1. For dressing, in a small bowl stir together the mayonnaise and curry powder. Set aside.
2. Spread one side of 4 of the bread slices with cranberry sauce. Divide and arrange turkey and watercress atop the cranberry sauce. Spread dressing on one side of remaining 4 slices of bread. Fold together into 4 sandwiches.
