1. Place each chicken piece between 2 pieces of plastic wrap. Using the flat side of a meat mallet, lightly pound to 1/4" thickness. Remove plastic wrap. Sprinkle chicken with salt and pepper.
2. Coat an unheated medium nonstick skillet with nonstick cooking spray. Preheat skillet over medium heat. Cook chicken in hot skillet for 4 to 6 minutes or until chicken is tender and no longer pink, turning once halfway through cooking time. Transfer to 2 dinner plates; top with cheese. Cover and keep warm.
3. In the same skillet cook and stir pear slices for 2 to 3 minutes or just until tender. Add apple juice and sage. Bring to a boil, scraping up any crusty browned bits from bottom of pan. To serve, spoon the pear mixture over chicken.
