Barbecue-Style Chicken

Ingredients

  • 2 potatoes unpeeled, cut into 1/2
  • 1 green pepper, large cut itno strips
  • 1 onion sliced
  • 1 tbsp tapioca, quick cooking, dry
  • 2 pound chicken, drumsticks or thighs skinned
  • 8 fluid ounce tomato sauce, can
  • 2 tbsp sugar, brown, packed
  • 1 tbsp sauce, worcestershire
  • 1 tbsp mustard, yellow, prep
  • 1 garlic clove minced
  • 1/4 tsp salt, table

Recipe Method

1. In a 3 1/2 or 4-quart slow cooker place potatoes, green pepper and onion. Sprinkle tapioca over vegetables. Place chicken on top of veggies.

2. For sauce, in a small bowl stir together tomato sauce, brown sugar, Worcestershire sauce, mustard, garlic and salt. Pour over chicken.

3. Cover and cook on low-heat setting for 10 to 12 hours or on high for 5 to 6 hours.

4. Transfer to large serving bowl. Skim fat from sauce.
