  • 2 pound chicken breast halves
  • 14 1/2 fluid ounce tomatoes, canned, diced with basil, oregano and garlic undrained
  • 1 1/2 cup water, tap
  • 12 ounce-weight dish, couscous, tstd pine nut, dry
  • 1/2 cup cheese, feta, traditional, crumbles
  • 1/2 cup olives, calamata, w/o pits

Recipe Method

1. Cut chicken into 1/2-inch pieces. Place chicken in a 3 1/2 or 4-quart slow cooker. Add tomatoes and water.

2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat for 2 1/2 to 3 hours. Stir in couscous. Cover and let stand for 5 minutes. Fluff couscous in with a fork. Serve with feta cheese and olives.
