Roasted Mango with Coconut Topping

Ingredients

  • 1 mango seeded, peeled and cubed
  • 1 tbsp coconut meat, dry, sweetened, flake, pkg
  • 1 tsp orange peel, fresh, grated
  • 1 tsp spice, ginger, crystallized, dried

Recipe Method

1. Divide mango cubes between two 6-ounce custard cups. In a small bowl, combine coconut, orange peel and crystallized ginger. Sprinkle over mango cubes.

2. Bake in a 425 F. oven about 10 minutes or just until topping begins to brown.
