Salmon with Couscous

Ingredients

  • 8 ounce-weight salmon fillets, fresh or frozen (2 fillets) about 1
  • 1/4 tsp seasoning, lemon pepper
  • 1 tsp soy sauce, shoyu, low sodium
  • 1 orange thinly sliced
  • 1 cup broccoli, florets, fresh
  • 1/2 cup broth, chicken, light, fat free, rducd sod, cnd
  • 1/3 cup water, tap
  • 1 garlic clove minced
  • 1/8 tsp salt, table
  • 1/2 cup couscous, quick-cooking

Recipe Method

1. Thaw fish, if frozen. Rinse and pat dry with paper towels. Sprinkle with lemon-pepper seasoning or pepper.

2. Place the fish in a lightly greased nonstick baking pan, tucking under any thin edges. Drizzle with soy sauce. Arrange orange slices on top of fish. Cover and bake in a 450 F. oven for 8 to 12 minutes or until fish flakes easily when tested with a fork.

3. Meanwhile in a medium saucepan combine broccoli, chicken broth, the water, garlic and salt. Bring to a boil; reduce heat. Cover and simmer about 3 minutes or just until broccoli is crisp-tender. Stir in couscous. Remove pan from heat. Cover; let stand for 5 minutes.

4. To serve, spoon couscous mixture onto a serving platter. Arrange orange-topped fish on top of couscous.
