Vegetable & Garbanzo Curry

Ingredients

  • 3 cup cauliflower, florets, plain, fzn
  • 1 cup green beans, frozen cut
  • 1 cup carrots sliced
  • 1/2 cup onion, white, fresh, chpd
  • 15 fluid ounce garbanzo beans, canned rinsed and drained
  • 14 fluid ounce broth, garden vegetable, cnd
  • 3 tsp curry powder
  • 14 fluid ounce coconut milk, cnd
  • 1/4 cup herb, basil, fresh, leaves, chpd

Recipe Method

1. In a 3 1/2 or 4-quart slow cooker combine cauliflower, green beans, carrots, onion and garbanzo beans. Stir in vegetable broth and curry powder.

2. Cover and cook on low-heat setting for 5 to 6 hours or on high for 2 1/2 to 3 hours. Stir in coconut milk and basil.
