Ingredients

  • 1 cooking spray, 1/3 sec spray
  • 1 cup flour, all purpose, bleached, enrich
  • 2/3 cup flour, whole wheat
  • 1 1/2 tsp baking powder, double acting
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt, table
  • 3/4 cup pumpkin, cnd
  • 1/2 cup applesauce, cnd, unsweetened
  • 2 eggs slightly beaten
  • 1/3 cup sugar, brown, packed
  • 1/4 cup milk, nonfat/skim, w/o add vit a
  • 2 tbsp oil, canola
  • 1/2 cup apples finely chopped

Recipe Method

1. Lightly coat all twelve cups of a muffin pan with nonstick cooking spray; set aside. In a large bowl combine flours, baking powder, pumpkin pie spice and salt. Make a well in the centre of flour mixture.

2. In a medium bowl combine pumpkin, applesauce, eggs, brown sugar, milk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Gently fold in apple.

3. Spoon batter into the prepared muffin cups, filling each about 3/4 full. Bake in a 375 F. oven for 20 to 25 minutes or until golden brown. Cool in pan on a wire rack for 5 minutes. Remove from muffin pan. Serve warm.
