Fast Fajita Roll-Ups

Ingredients

  • 12 ounce-weight beef, flank steak, sirloin (or chicken breast halves)
  • 4 whole wheat tortillas 8
  • 1 cooking spray, 1/3 sec spray
  • 1/3 cup onion, white, fresh, chpd
  • 1/3 cup peppers, bell, green, sweet, fresh, chpd
  • 1/2 cup tomatoes, red, fresh, year round avg, chpd/sliced
  • 2 tbsp salad dressing, italian, house, rducd fat, light
  • 1/4 cup cheese, cheddar, fat free, shredded
  • 1/4 cup sauce, taco
  • 1/4 cup sour cream, light

Recipe Method

1. If desired, partially freeze beef for easy slicing. If using beef, trim fat. Cut beef (or chicken) into bite-size strips.

2. Wrap tortillas tightly in foil. Heat in a 350 F. oven for about 10 minutes or until heated through.

3. Meanwhile, coat an unheated 12-inch nonstick skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add meat, onion and sweet pepper to pan. Cook and stir for 2 to 3 minutes (if using chicken, cook until no longer pink). Remove from heat. Drain well. Stir in tomato and salad dressing.

4. To serve, fill warm tortillas with meat mixture. Roll up tortillas. Serve with cheese, salsa or taco sauce, and sour cream.
