Fiesta Cheese Tostadas

Ingredients

  • 6 tortilla, corn, 6"
  • 2 tsp oil, olive, extra virgin
  • 1 cup dish, refried beans, vegetarian blend
  • 1/3 cup sauce, picante
  • 1 red, yellow or green sweet pepper cut into thin bite-size strips
  • 1/3 cup sweet kernel corn, frozen thawed and drained
  • 3/4 cup cheese, cheddar, low fat, shredded
  • 1 cup lettuce, iceberg, shredded
  • 6 tsp sour cream, light
  • 1/2 cup tomatoes, red, fresh, year round avg, chpd/sliced

Recipe Method

1. Place tortillas in a single layer on an ungreased extra-large baking sheet. Brush the top side of each tortilla with a little of the oil. Bake, uncovered, in a 400 F. oven for 5 minutes. Remove.

2. Meanwhile, in a small bowl, stir together refried beans and picante sauce or salsa. Spread bean mixture evenly over the tortillas. Top with pepper strips and corn. Sprinkle with cheese.

3. Bake for 7 to 8 minutes more or until cheese is melted and filling is heated through. Top with lettuce, garnish with sour cream and chopped tomato.
