Terrific Tortellini Salad

Ingredients

  • 9 ounce-weight tortellini or ravioli, refrigerated package
  • 3 cup broccoli, florets, fresh
  • 1 cup carrots, fresh, chpd
  • 1/4 cup onion, green, chpd, fresh
  • 1/2 cup salad dressing, ranch, w/buttermilk, light, w/art swtnr
  • 1 tomato, large chopped
  • 8 ounce-weight pea pods halved
  • 1 tbsp milk, nonfat/skim, w/o add vit a

Recipe Method

1. In a large saucepan cook pasta according to package directions, adding the broccoli and carrots for the last 3 minutes of cooking time Drain. Rinse with cold water. Drain again.

2. In a large bowl combine cooked pasta mixture and green onions; drizzle with dressing. Gently toss to coat. Cover and chill for at least 2 hours or up to 24.

3. Before serving, gently stir tomato and pea pods into pasta mixture. If necessary stir in a little milk to moisten.
