A delicious side-dish.
1. In a covered medium saucepan boil salted water and cook potatoes, cauliflower and carrot for 15 to 20 minutes or until tender. Drain. Mash with a potato masher or beat with an electric mixer on low speed. Add sour cream and the 1/4 tsp. salt. Mash or beat until combined. Season to taste with additional salt and pepper. Top individual servings with Parmesan cheese.
