Glazed Carrots & Parsnips

A simple and tasty side-dish.

Ingredients

  • 1 pound carrots cut into 1/2
  • 8 ounce-weight parsnips peeled and cut into 1/2
  • 1/4 cup water, tap
  • 1 tbsp butter, salted
  • 1 tbsp honey, amber
  • 2 star anise, whole
  • 1/2 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground

Recipe Method

1. In a large skillet combine carrots, parsnips, the water, butter, honely, star anise, salt and pepper. Bring just to a boil; reduce heat to medium-low. Cook, uncovered, for 7 to 10 minutes or until vegetables are crisp-tender, stirring occasionally. Increase heat to medium. Cook for 3 to 5 minutes or until vegetables are light brown, stirring gently. Discard star anise.
